YACON YACOmax is a product based on yacon Yacon is the root of a plant that grows in certain Andean countries as Peru. Andean cultures have used yacon as a part of their diet for centuries and have attributed to it anti-diabetes properties. It has also been used as a contributor to relieve gastrointestinal and lipid problems. Unlike other tubers and roots that store their carbohydrates in the form of starch, yacon preserves then in the form of inulin and oligofructanes (FOS) a polymer mainly composed of fructose and glucose. This polymer is not decomposed in the human tract, and therefore is a substance that doesn´t bring calories to the organism. This is the reason why it is an important source for the sweetening for the industry. Laboratory tests have indicated that the systematic consumption of fructanes significantly decreases the level of tryglicerides in the blood. Studies which have taken place in the States and in the U.,K. show evidence that the inulin and oligofructanes (FOS) promoted the growth of beneficial germs that are part of the intestinal flora, preventing the growth of detrimental micro-organisms and reducing the bacteria population that produced colon toxic substances. It also contains minerals like: potassium, phosphorus, iron, magnesium, sodium, calcium and copper. Among vitamins contained in the yacon, it has high contents of thiamine (B1), riboflavin (B2) and niacin amide (B6) It is also known that most of the positive effects of yacon are produced by the high content of a special sugar that is found in its roots, the oligofructanes (FOS). This sugar is not digested in the human intestine and it only has one fourth of the caloric value of regular sugar; and is therefore considered as a dietetic and natural sugar. In addition, the content of fructose in yacon contributes to evacuate the glucose of the bloodstream towards the tissues giving the risk of hyperglicaemia increase of sugar blood levels). Inulin like Oligofructanes (FOS) act like prebiotics, non digestive substance tha selectively contributes to nourish the natural germs that are part of our intestinal flora (rebuilding it ), named bifido bacteria and lacto bacillus, selectively stimulating its growth and stopping the development of detrimental organisms in the colon. The inlulin and oligofructanes (FOS) substances, constitute a bifido factor. The bifido bacteria contributes to prevent the increase of fat in the blood (Hyperlipidemia), and therefore, to decrease the level of cholesterol and tryglicerides.
